A Day at Prince Street

Megan and I took a trip to Prince Street on Friday. We shot a few neat shots of our cups- I know right, how cliche.

You can see where we are from the background, right? :D

While waiting for my mother to pick us up, we spotted a perfect brick/stone wall across the street by the Fulton.

Gaw-geous.

SuperDuperHealthy Chocolate Cookies

Craving sugar? Try these SuperDuperHealthy Chocolate Cookies instead. They're chock full of healthy amazingness and they taste like it, too (not healthy, amazing). Instead of using butter and sugar, we're going to use sour cream and honey for a low-fat, low-sugar cookie.
The Ingredients

Ingredients:
1 cup + 2 Tbs sour cream
1 cup honey
1 cup light brown sugar
2 eggs
2 tsp vanilla
2 1/2 cups chickpea flour OR all purpose flour for something that tastes normal :)
3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
6 ounces or about 1 cup chocolate chunks (or
      wilber buds as I used)

I mashed Wilbur buds with this spiky meat mallet.
I'm definitely very evil.
Procedure:
1. Preheat oven to 325 and line 3 baking sheets with parchment paper.
2. Beat sour cream and brown sugar/honey until well mixed.
3. Add one egg and beat. Add second egg and vanilla and beat.
4. In a separate bowl, combine the flour, baking soda, cocoa powder, and salt.
5. Add the dry ingredients a little bit at a time until all mixed.
6. Add the chocolate chunks and mix just a little until combined.
7. Drop cookie dough in heaping tablespoons onto the parchmented cookie sheets. Bake 10-12 minutes on convection bake until the tops are dry and the cookies are a little puffed.
The magical metal cookie remover.
8. Cool on baking sheets 5 minutes, then remove with a metal cookie remover to cooling racks to cool completely.

Gooey Goodness
Nom nom.

Many Things

It's picture time!!!

In the past few days, I've done many things...

I've...

-Sewed a sundress from a man's dress shirt

-Had a gorgeous photoshoot

-Reformatted and redid my blog :)

-Pulled my hip flexor (no picture, as that would be weird.)

-Cut/Sewed/Glued/Bookbinded (bookbound?) my own journal!  ALL from scratch!

I'm very proud of myself. If you want tutorials on any of this stuff, please email me at acrutchy@gmail.com. Trust me, you don't want to pull your hip flexor, though.

Just another tibit...

For lunch today, I had Egg and Banana pancakes. Here's the recipe for these delicious pancakes packed with potassium and protein.

Ingredients:

2 eggs

1 banana

nutella or another substitute (optional)

Mash the banana and mix well with the egg. Spray a non-stick pan with cooking oil (pam, i think it's called...) and cook them well on medium heat until brownish. Spread with yummynummy nutella and eat.

Yeah, they look gross, but are you going to risk that? IT'S NUTELLA, PEOPLE!!!!

I did the last 8 pages today on my deck- what a beautiful day, finally. It took us a while to get here....

We watched the movie "Radio" last night. It was really great, and now I've been thinking (well, I was thinking about it before the movie too....) about doing something with special education in college. Of course, our situation with mentally challenged people today is a lot different than then... But still.

So yeah...
